PEMANFAATAN LIMBAH INDUSTRI TAHU MENJADI PANGAN BERGIZI DAN POC: KUKERTA DESA SUKAMAJU

Abstract

In Sukamaju Village, Bengkalis, household-scale tofu factories produce significant organic waste, previously discarded or sold cheaply as animal feed. Through Universitas Riau’s "KUKERTA Berdampak" program, this initiative aimed to assist tofu producers and local PKK groups in converting tofu dregs into nutritious food products and liquid waste into liquid organic fertilizer (POC). Using a Participatory Rural Appraisal approach, the program included needs assessments, individual mentoring, hands-on workshops, and interactive outreach sessions. Tofu dregs were processed into savory crackers, while liquid waste was fermented for 14 days into POC using a pineapple-based bioactivator and palm sugar. Workshops at the village hall demonstrated initial formulations before trial runs at the KUKERTA post. The activities successfully enhanced community knowledge, skills, and hygiene awareness, while producing ready-to-use POC for household cassava and chili cultivation. This sustainable program fosters environmental sustainability and creates added economic value for local households.
